During the course you will practice making sushi with the use of various fishes directly imported from Japan.
Only by looking, touching and tasting, you would be able to acknowledge their differences from fishes caught and bred locally.
We have lectures on ingredients to substitute Japanese ingredients that can be easily and generally obtainable outside of Japan.
